According to Jon (who is a weather fanatic) this January has been one of the coldest since people started recording that kind of stuff more than a hundred years ago. I think we were over the freezing point (32°F or 0°C) only a couple of days the whole month and today we are at only 7°F (-13°C) right now. That is cold!
That’s why I have been making a lot of soups lately and blogging about them. Here’s another one I just prepared using four different root vegetables: onions, carrots, beets and potatoes. The preparation is similar to the other soups I have posted here. I boiled the vegetables in chicken broth until tender, blended and seasoned the soup.
I love the color of this soup. The beets, even though I only used 2 small ones, were the stars in this soup. They gave it its beautiful red color and sweet taste that mixed perfectly with the other root vegetables. Now if you excuse me, I think I am going to have some soup for breakfast before I head back under the blankets. It is just way too cold to do anything this weekend 🙂
