Pear and Spinach Salad with Peanut Butter Dressing

Notes: •Don't let the simpleness of this salad fool you. It has very few ingredients but the combination of the sweet, tangy and savory flavors are an explosion of yumminess in your mouth. •I would use pine nuts next time. I think they would be a great addition.
  • The ingredients:
  • ½ romaine lettuce
  • ½ red leaf lettuce
  • 2 cups fresh spinach
  • 1 pear
  • 100 gr goat cheese
  • -For the dressing:
  • 1 TBSP olive oil
  • 1 TBSP balsamic vinegar
  • 1 TBSP peanut butter
  • dill
  • basil
  • ground black pepper
  • pinch of salt
  1. The how-to:
  2. Cut the pears in quarters and remove the core. Slice them and set apart.
  3. In a bowl whisk all the dressing ingredients until well blended.
  4. Arrange the greens in the center of a plate. Arrange the pear slices around them.
  5. Arrange one or two slices of the goat cheese on top. You can also crumble it and sprinkle on top.
  6. Drizzle salad with dressing and enjoy!
