<p style="text-align: left;"><span style="text-align: left;">I&#8217;m not a vegetarian, but it would be very easy to be one here in Mexico. Like I mentioned in </span><a style="text-align: left;" href="http://whatscookingmexico.com/2012/02/29/nixtamal-and-tortillas/">this maize post</a><span style="text-align: left;">, the diet of pre-Hispanic Mexican civilizations didn&#8217;t contain a lot of meat. Their main ingredients were maize, squash, chiles, amaranth, and wild greens among many others. One of the of most important ingredients was beans. When mixed with the other ingredients already mentioned they created a healthy and balanced diet that allowed civilizations to thrive for thousands of years. </span></p>

<p style="text-align: left;">It has been a while since the last time I&#8217;ve posted a dessert on this blog. I really don&#8217;t know what happened. I still love sweets and desserts. As a matter of fact I act like a little kid every time I hear the ice cream truck (it&#8217;s more like a converted VW bug, I&#8217;ll  take a picture of it soon) from my favorite <em>heladeria</em>, <strong>cremeria chalco</strong>, that comes to our neighborhood every Tuesday. Also, every week when we go shopping to our <a title="Market Monday – Sullivan Tianguis a Photoset" href="http://whatscookingmexico.com/2012/01/30/market-monday-sullivan-tianguis-a-photoset/">local tianguis</a>, I never fail to buy <em>gorditas, galletas and tostadas de nata</em> (cream paddies, cookeis and tostadas). So why haven&#8217;t I been making more sweet goodies?</p>

<p style="text-align: left;">Stuffing peppers is always fun. I used to avoid making any kind of chile relleno because I found the task of roasting and cleaning the poblano peppers very tedious. But now, while roasting a pepper to be stuffed, I only try to think about how delicious it&#8217;s going to taste. That makes the whole process a lot easier and a lot more fun. Besides, who doesn&#8217;t love the smoky aroma of a roasted poblano pepper?</p>
