There are two ingredients that I always have handy in my kitchen: avocado and chipotle peppers. Avocado, as you might know, is one of those superfoods that can save your life—for real, look it up. Chipotle peppers, in the other hand, are just tasty prepared peppers (if you buy them canned) with the right amount of heat that doesn’t overwhelm.
I have thought about healthy and easy-to-make lunches for a few weeks now. You see, I have this big problem. I live in the city with the most delicious tacos and street food in the world—it’s a fact, also look it up. I’ve abused this asset for a long time and now I need to cut back a little on all that deliciousness.
But that doesn’t mean my food has to be tasteless. I’m a firm believer that healthy is not the opposite of delicious. These tapas I prepared yesterday for lunch are the proof—satisfying, healthy, and easy to make.
- 1 loaf whole wheat bread, sliced
- 1 large Hass avocado
- 1 chipotle pepper (1/2 for less heat), chopped
- pinch of salt
- 1 tomato, sliced
- juice of half a lime
- avocado oil or extra virgin olive oil
- In a bowl lightly mix the avocado pulp and the chopped chipotle pepper.
- Add lime and salt and mix some more.
- Place bread slices on a plate and serve about 1 TBSP of avocado and a tomato slice on top.
- Drizzle some oil and enjoy!
Note: This is the first post I write for this blog in over a year. I said last year I was going to stop posting here. But after a conscious consideration I decided to resurrect it. This blog means a big deal to me. It saved my life once (someday I will tell the story) and it can do it again. Right now I’m going through a rough patch so for me there’s no better time to take this blog out of storage, dust it and get my life on track doing what I love.
There is another reason, however. A group of blogging friends who have known each other for several years and were part of the heydays of foodbuzz and food blogging have toyed with the idea of getting back to slow blogging. We have discussed the idea of a challenge, like in the old days. So I’m taking the initiative to start it. I challenge my friends, especially those who have forgotten about their blogs, to make something delicious (quick and easy while we get back in shape) and post it on their blogs. Write a note letting your readers know why you’re doing it. This is not a competition so there are no deadlines or complicated rules. Just. Do. It. What do you say? Will you follow me?
