There are a lot of things in this that make me happy, a good book, an interesting movie, spending time with friends, a glass of wine, a delicious meal and peanut butter. I have mentioned before that I don’t like boring salads. I personally think that the garden salads they serve at a lot of restaurants in the US are an abomination, so predictable and boring. Maybe that was the reason that for a long time I didn’t eat salads. I used to think they were all boring. But then I started to read other food blogs and I realized that my salad fate was on my own hands. I’m so glad I took that road. Now salads are one of the best part of my meals. Sometimes they are so good that I just eat salad until I’m full.
That was the case with this one. I got inspired by a pear salad they serve at Azul in Condesa, I used very few ingredients that I had at hand and the result was a salad so delicious that I see myself eating this several times a month from now on. The best part was the peanut butter dressing. Yes, you read me right, peanut butter. I might have finally gone crazy, or just getting back to my normal crazy self. I tasted the dressing I had made for the salad and I wasn’t satisfied. I took another look at the pantry and saw the jar of peanut butter begging me to use it. Why not? I thought. Trust me on this one, it was the right call.
- The ingredients:
- ½ romaine lettuce
- ½ red leaf lettuce
- 2 cups fresh spinach
- 1 pear
- 100 gr goat cheese
- -For the dressing:
- 1 TBSP olive oil
- 1 TBSP balsamic vinegar
- 1 TBSP peanut butter
- dill
- basil
- ground black pepper
- pinch of salt
- The how-to:
- Cut the pears in quarters and remove the core. Slice them and set apart.
- In a bowl whisk all the dressing ingredients until well blended.
- Arrange the greens in the center of a plate. Arrange the pear slices around them.
- Arrange one or two slices of the goat cheese on top. You can also crumble it and sprinkle on top.
- Drizzle salad with dressing and enjoy!

Very composed and lovely. I never tried it but I'm sure it works. Peanuts are often used in dressings for Asian dishes.
Peanut butter would lend a special flavour to the dressing Ben. Anuthing with fresh, seasonal pears has my vote.

Peanutbutter dressing… Hmm, I've used that on many thai salads so I can see how it must be delicious here too! I agree that a lot of the times salads served in restaraunts really do not do the word salad justice… You can have soooo many delicious salads that it's a mystery why they end up serving the same old boring and unappetizing stuff all the time..

Salads can be very boring, but this one looks fantastic! Love the goat cheese with the pears, and I want to try this dressing.
