Beef and Chorizo Meatballs

Meatballs, who doesn’t love them? They’re easy to make, fun to eat and you can experiment with them as much as you want. In Mexico meatballs are called albondigas and they are usually served with a red salsa made with pasilla peppers and tomatoes. I love albondigas the way my mom makes them, but I wanted to give this dinner a little twist. I used a little bit of chorizo that I bought last week, excellent chorizo, by the way, and made a chipotle and tomato sauce to go with the meatballs. It was a very simple dinner, yet delicious. The only problem that I have now is that I made too many and I’ll be eating them for several days. I’m still having trouble measuring what I make. I guess I need to start learning how to freeze food. I made a mango salad for dinner too and served the meatballs with Mexican rice.

Beef and Chorizo Meatballs with Chipotle Sauce

  • •2 lbs ground beef
  • •1/2 lb chorizo
  • •1/2 medium white onion, chopped
  • •1/2 tsp chopped basil
  • •1/2 tsp chopped rosemary
  • •1 egg
  • •salt and pepper to taste
  • •2 large roma tomatoes
  • •1/2 medium white onion
  • •1 garlic clove
  • •1 chipotle in adobo sauce pepper
  • •2-3 cups chicken broth
  • •salt to taste
  1. In a large bowl mix ground beef, chorizo, chopped onion, basil, rosmary and egg. Season to taste.
  2. Form meatballs of about 1" in diameter.
  3. Blend together tomatoes, white onion, garlic and chipotle pepper with 1 cup of the chicken broth. Pour into a sauce pan over medium high heat.
  4. Heat up 3-4 TBSP of canola oil in a frying pan. Place meatballs in the frying pan and turn them over when they start to brown. When they are brown from both sides transfer them to the chipotle sauce.
  5. Pour the rest of the chicken broth and bring to a boil.
  6. Reduce heat to low, season to taste and simmer for about 10 minutes.
  7. Serve with Mexican rice and enjoy!

  • A terrific idea to add chorizo to the meatballs, so perfect with chipotle sauce and the mango salad is a lovely and refreshing side dish.
