Chicken Sopes with Mango Guacamole

It feels so good to get back to cooking. Yes, you read that right. For the past several months I didn’t cook. My mom is an amazing cook and she loves to do it. So for the few months I stayed at my parents’ house I really didn’t have to worry about cooking. But now I’m on my own again I have to do it again. I really missed it, but it’s kinda depressing cooking for only one person.

Anyway, this post is only to inform my readers that I’m still alive and back to cooking. Like I’ve mentioned many times before I’ve been very busy in other projects (food related too, thankfully) and entertaining. Three of my best friends from Ohio came to visit me last month and two more came last week. I showed them around the city, just a small part, though. There’s so much to do and see in this city that one week is not enough to see it all. Here are some pictures of what we ate. Azul en condesa and Corazon de Maguey served us some amazing food!

And what about the sopes from the first picture? Well I’ve made sopes and posted the recipe before. I made these to test my new camera, a Pentax K7 that my friends brought over from the States. I love my Canon D60. We have a long history together, but it was time to upgrade. I’ll still use my old but reliable camera, but for now I need to get used to the new one. It’s so pretty and has so many features!

Anyway, here’s the link to the sope recipe and the delicious mango guacamole I topped them off with. It was a savory, sweet and spicy flavor party. Expect more recipes soon, now I’ll be able to entertain more in my new apartment and I’ll be sharing the recipes and pictures with you here.
