Baked Pears with Rompope Sauce

Last holiday season I wrote about rompope, Mexican eggnog with rum created by nuns from Puebla in the 19th century. I’ve made a couple of things using it, including some delicious cookies that everybody loved. This weekend I bought some pears at the street market by my parents’ house and was looking for recipes online to make a dessert with them. I found some delicious recipes that just by looking at them made me want to lick my monitor. Unfortunately I didn’t have the ingredients for many of them so I decided to bake them following this recipe.

It was very simple to make, but not less delicious. My family loved them and they were the perfect dessert after the pumpkin mole enchiladas we had just had. I made some changes to the recipe, changing the almonds for pecans and adding the rompope to the honey. If you are looking for a simple and delicious recipe to prepare pears, look no further. Baked Pears with Rompope Sauce

Ingredients
  • •3 pears, cut lengthwise and core removed
  • •1/4 cup flour
  • •1/4 cup oats
  • •1/8 cup brown sugar
  • •1/8 cup unsalted butter cubed at room temperature
  • •1/4 cup chopped pecans
  • •1/8 tsp cinnamon
  • •1/4 cup honey
  • •1/2 cup rompope
Instructions
  1. Preheat oven to 350°F (175°C)
  2. Mix flour and brown sugar together. Rub butter into flour mixture, a little at a time until it resembles bread crumbs.
  3. Stir in the oats, pecans and cinnamon.
  4. Spoon the crumble mixture into the well left by the core in the pear halves. Place them on a baking sheet and bake for about 30 minutes or until the crumble is browned.
  5. In a small sauce pan mix honey and rompope. Warm over slow heat stirring constantly until they blend.
  6. Serve pears warm and drizzle with the rompope/honey sauce.
