For the past 8 years I got used to cooking for 2 people. I really enjoyed that. It was the best part of my day. Cooking for bigger groups was always a great experience, but something I wouldn’t like to do in a regular basis. Now that my household was reduced to only one person I sometimes find cooking a very tedious chore. My mom feels the same way cooking for only 2 people now. We weren’t a big family, only two children, but there was always somebody else living with them (cousins, nephews, nieces, uncles) even after my sister and I moved out. So now my mom is always cooking very simple dishes, but that doesn’t make them less delicious.
These chiles rellenos are a good example of simpleness that doesn’t sacrifice flavor. The hardest part is cleaning the poblano peppers. They are also a perfect vegetarian dish and very healthy, if you make some simple changes. After cleaning the peppers, just stuffed them with refried beans and Oaxaca or mozzarella cheese. Serve them with the creamy tomato sauce that I prepared for these crepes (skip the sour cream to make it healthier). This is a great “after-the-holidays” dish because it’s simple and light.
