Lately I’ve been posting a lot of taco recipes. With the warmer weather and all that delicious produce available at the store and considering that you can make tacos out of almost anything very easy, I can’t stop myself. One of my latest taco adventures was these delicious fish tacos that by themselves wouldn’t have been as impressive. What made them totally unique was the mango salsa that I served them with.
Mango Salsa

Note: For the fish part I used tilapia cooked with lime juice, salt, pepper and fresh parsley.
Ingredients
- •1 large mango, peeled and cut in small cubes
- •1/4 red onion, sliced
- •1 jalapeno pepper, chopped
- •bunch of cilantro
- •salt to taste
- •the juice of 1 lime
Instructions
- •Mix all the ingredients in a large bowl and refrigerate for about 2 hours before using.

Love Mexican recipes for the wide range of herbs and spices they use. I doubt, if there is any other cuisine in the whole world that offers up the kind of variety and flavor that you get to savor in Mexican cuisine. Great mexican recipes are indeed a great treat for a foodie!
