Fish Tacos with Mango Salsa

Lately I’ve been posting a lot of taco recipes. With the warmer weather and all that delicious produce available at the store and considering that you can make tacos out of almost anything very easy, I can’t stop myself. One of my latest taco adventures was these delicious fish tacos that by themselves wouldn’t have been as impressive. What made them totally unique was the mango salsa that I served them with.

Mango salsa

The ingredients:

1 large mango, peeled and cut in small cubes

1/4 red onion, sliced

1 jalapeno pepper, chopped

bunch of cilantro

salt to taste

the juice of 1 lime

The how-to:

Mix all the ingredients in a large bowl and refrigerate for about 2 hours before using.

Note: For the fish part I used tilapia cooked with lime juice, salt, pepper and fresh parsley.

I love mango salsa with fish! And, I think I could enjoy fish tacos every day. This is a great combo.

I feel like I've been meaning to make a mango salsa for decades or so. this looks delicious…especially because it is so colorful.

Yum!! I have a feeling I would make this mango salad and just eat it straight out of the bowl, leaving none left for the actual tacos. Looks delicious!

Love Mexican recipes for the wide range of herbs and spices they use. I doubt, if there is any other cuisine in the whole world that offers up the kind of variety and flavor that you get to savor in Mexican cuisine. Great mexican recipes are indeed a great treat for a foodie!
