It’s already spring, but we are still having some chilly days in our corner of the world. And though I am ready for summer salads, grilling (yes, this year I am going to start grilling) and warmer temperature foods, I can still enjoy some comfort food and hot drinks from colder months. Last time I posted about the mangoes that I’ve been receiving from the Mango Board. What I didn’t post was what I did with the first batch of mangoes they sent me, but here it is finally. Would you care for a steamy cup of mango atole? This drink is perfect for a chilly spring night because it combines the comfort of a hot drink and the flavors of summer.
- •1 lt (4 cups) water
- •1 can (12 oz or 35o ml) evaporated milk
- •1 stick of cinnamon
- •3 TBSP corn starch
- •1 mango, diced
- •1/4 cup sugar
- •Garam Masala (view description below)
- Blend mango with 1 cup of water.
- Bring water, milk, and mango to a boil in a medium pot over medium heat with the stick of cinnamon.
- In ½ cup of water dissolve corn starch until smooth.
- Once the water starts to boil add corn starch and sugar.
- Simmer for 15 minutes. Stir constantly so it doesn’t stick to the bottom of the pot.
- Serve hot, sprinkle some Garam Masala on top and enjoy!
The Garam Masala is a sweet, aromatic mix of spices that I received along with the mangoes and it has spices like cinnamon, coriander and cardamon. It tasted great sprinkled on the atole.
