Last week when I was browsing food blogs in Spanish I ran into this very easy and delicious recipe on Kako’s blog, En Guete!!! Since the moment I saw this Pastel de Manzana a la Normandie I knew I had to make it. Kako remembers that at her parents’ house, apple cakes and pies were made every week, but this one is the best she’s tasted and I have to agree with her. I prepared this cake/pie last Thursday for a dinner we had with a friend of ours and it was a big hit. I am re-posting Kako’s recipe here with the original metric system measurements. You can use the converter on the sidebar if you don’t use the metric system (I’ve been living in the US for almost 10 years and using metric units feels so weird, LOL)

  • •125 gr soften butter
  • •30 gr confectioner's sugar
  • •1 egg yolk
  • •150 gr AP flour
  • •50 gr whole-wheat flour
  • •1 tsp ground cinnamon
  • **For the filling:
  • •3 apples
  • •300 gr sugar
  • •1 packet vanilla sugar (I used 1 tsp of a sugar/cinnamon/vanilla mixture I had from somewhere in my pantry)
  • •3 eggs
  1. Using a mixer, cream butter and confectioner's sugar. Add the egg yolk and mix very well.
  2. In another bowl mix flours and ground cinnamon. Add the butter mixture and mix well to form a manageable dough.
  3. Grease the pie dish and cover it with the dough. Refrigerate for 15 minutes.
  4. Pre-heat oven to 200°C.
  5. In the meantime, peel, core and cut apples in quarters.
  6. Whisk together sugar, vanilla and eggs.
  7. Place apple in the dish and pour the egg mixture over them.
  8. Bake for 40 minutes or until the top has browned. Turn the heat off, but don't take the pie out yet. Wait until the oven cool downs a little bit. That's to avoid the pie to collapse.
