I have never cooked a Thanksgiving dinner before, but this year we are going to have a Thanksgiving dinner for friends that can’t go home so I need to start thinking about the menu. Besides the traditional Thanksgiving food I want to include some of my own recipes and food from other countries because I’ll have friends from all over the world. I started experimenting last night and I came up with this mashed pumpkin side dish. I thought it was pretty good, but Jon didn’t have any because he said he is getting tired of pumpkin, like such thing could be possible! Take a look at the recipe and tell me what you think.
Mashed Pumpkin

Ingredients
- •4 cups roasted pumpkin
- •1/2 stick butter
- •3 garlic cloves, minced
- •1 cup milk
- •1 tsp powder pepper
- •1 tsp fresh basil
- •1 tsp fresh rosemary
- •1 tsp fresh sage
- •1 tsp oregano
- •ground cinnamon
- •salt and pepper to taste
Instructions
- Melt butter in a medium size pot over medium heat. Saute garlic and add pumpkin.
- Mash pumpkin when it starts to warm up.
- Mix in milk and spices and bring to a boil stirring constantly
- Reduce heat to low, season and simmer for 5 minutes, keep stirring.
- Serve as a side dish.
- I am using the last of my garden herbs and I added the powder pepper just to give it a little bit of a kick. I really liked this, but I am opened to suggestions. What about mixing some potatoes? Or using other kinds of ingredients?

Call me goofy but I prefer non-traditional food on Thanksgiving and mom is forced to make Romanian dishes instead of turkey.
We gutted about 4 pie pumpkins last week and besides having a ton of seeds we have about 8 cups of pumpkin the needs a use. Love this idea!!!
