I so agree with you about the freshness of the foods of Mexico and Italy – you really exemplified those fresh flavors here with this amazing dish! I would love to dig in right now! My oldest recipe, from back when I was 13, was for cheese enchiladas. That was almost 30 years ago, and I’m still refining and playing with them. I think the crepe idea is brilliant, and I love a salsa verde. What a great entry and don’t worry about the photography — I can’t count the number of meals Christey and I have eaten dry and cold because of shooting it…it’s all part of the process

The pictures look beautiful to me Ben, so I shouldn’t worry about it! I do try and setup my lighting before I actually finish the food, so maybe a tip for next time?

So my eagle looks like a guajolote? You turkey! But, you’re probably right. It was done free-hand. Maybe if I had your photoshop skills it would have looked better. :p BUT, I think your enchiladas rock. So does your photo. Besos y abrazos.
