I have to grow my own zucchini this year. The flor de calabaza is worth it. I haven't had a good quesadilla like yours in a long time. When I make whole wheat tortillas, I add some enriched flour to keep it from cracking and some flax seed to add extra crunch, flavor and nutrient rich antioxidants. I've yet to try huitlacoche...one day I'll get lucky. It sounds divine.

Ben - Thanks for the clarification on the Flor de Calabaza. I have only seen them fresh and this neck of the woods, they're called zucchini flowers. We generally stuff them with cheese and bake them.
