Poached eggs in salsa verde

Some time ago I made huevos ahogados, scrambled eggs in tomatillo (or tomato) sauce. Somebody left a comment saying that I could use the same sauce to poach eggs, but since Jon doesn’t like runny yolks I forgot about it for awhile. But a couple of days ago I was trying to figure out what to make for breakfast when I saw some tomatillos that needed to be used right away so I decided to give poach eggs (or something like it) a try.

I made the same tomatillo sauce and added 4 eggs when it was boiling. I let them cook for about 7 minutes because like I mentioned before, Jon won’t eat eggs with runny yolks. I liked how they turned out, kinda like spicy and very flavorful hard eggs. However, it turns out Jon doesn’t like hard eggs either, WTF?!?!?! So even though I really liked them I won’t be making them again, at least not for him, anytime soon.

  1. Oh Lordy Ben that looks wonderful only I let mine be runny! And today we just found a grocery store in the neighborhood with the most beautiful tomatillios I’ve ever seen for 50 cents a pound! Got to make this.

  2. I’m also a fan of the runny yolks…so tasty. I love making a nice tomato and vegetable sauce and dropping some eggs in for a couple minutes of cooking. Served on top of toast or an english muffin is perfect. Thanks for sharing, it looks delightful!

  3. Fancy breakfast. Eggs scrambled with cheese is awesome. Fried and slapped on a piece of toasted bread with bit of mayo and tomato is good too! Eggs are great no matter how they come.

  4. Damned if you do, damned if you don’t with those eggs! LOL The whole dish looks beautiful though and I’ll take it with runny or hard eggs. Plates like this makes me wish that tomatillos were cheaper here.

  6. Lmbo! He’s picky, right? My favorite way to have eggs is poached, definitely. But I’ve never thought of poaching them in salsa–it’s genius! And salsa verde is one of my favorites! Great dish, all around, Ben.

  11. Eggs are, for the most part, hubby’s dish. On a weekend he will make omelets with mushrooms, onions and cheese or poached eggs on toasted French bread with grated Parmesan. Yum.
    I have never had them your way before – looks really good!
    My daughter likes hard boiled eggs quartered and placed on top of a salad – which I do for her fairly often as she doesn’t eat meat.

  14. This sounds sooooooo good. I would never have thought of poaching the eggs *in* the salsa. YUM! Isn’t it funny what we don’t know about our significant others? I just found out mine didn’t like cake. After 21 years. Go figure.

  15. I am with Jon on “runny eggs”. Although not due to taste but more for safety. Had salmonella from eating raw eggs ( I liked to whisk a couple or so with a Sarsi pop) a few years ago and it was a quite a scare. Now unless I can buy pasteurized shell eggs (very expensive though), I cook my yolks cooked through. Delicious recipe you have here Ben! I think the way the eggs are cooked will not matter with such a sauce!

    These eggs look great – but I second (or 20th) the emotion expressed by several before me: make them runny! Runny poached eggs are the best. :)

    Such a typically Mexican combination to have the green salsa on eggs with some beans (as I spy in your picture), but I always fry or scramble. Good call to try poaching on your part.

  17. This is a very unusual dish, the only thing is that the eggs should have been a little softer. I love poached eggs.

Love this dish so unusual, I see you had a few issues with the eggs, some people can never be satisfied, I did have a little giggle to myself doesn’t like soft runny eggs and then doesn’t like them hard, you really have to see the funny side of this and have a good laugh, thatbks for the recipe, will have to try it out sometime.
