Peanut butter bbq chicken
Makes 3 big servings

The ingredients:

  • 3 chicken legs (drumsticks and thigs)
  • 4 TBSP peanut butter (the kinda that hasn’t been recalled, just to be safe)
  • 1/2 cup vinegar
  • 1 to 2 TBSP hot sauce (Tabasco or similar)
  • 2 TBSP brown sugar
  • salt and pepper to taste
  • other spices as desired

The how-to:

  1. In a small sauce pot mix peanut butter, vinegar, hot sauce and brown sugar and heat over medium-high heat. Stirr constantly until the sauce starts to thicken.
  2. Rub chicken with salt, pepper and spices and put in a large container. Pour peanut butter sauce over it and spread evenly all around. Refrigerate for at least 2 hours. Overnight works better.
  3. Put chicken in a baking dish, cover with foil and bake at 250°F (120°C) for approximately one hour.
  4. When cooked let it rest for 10 minutes before serving and enjoy!

The afterthoughts:

  • I don’t think there is anything I would change on this recipe. It is easy. It uses a very few ingredients available in almost every kitchen and it is very tasty. Just add more hot sauce if you’d like it hotter.
