My mom says avocado is nature’s butter and I agree with that statement. Back home we ate them almost with every meal every day. Avocadoes are not only delicious, but also nutritious. According to The World’s Healthiest Foods, eating avocadoes abundantly help to decrease bad cholesterol and increase the good kind, and that is just one of the many benefits of including them in your diet.
That’s why after making these avocado cornmeal muffins I decided to send the recipe to the fundraiser my friends Ivy, Val and Giz are organizing. What is this about and how can you help? Those three amazing women started a social network called BloggerAid several months ago to bring bloggers together in the alleviation of hunger. Through several means they raise funds for organizations that fight hunger around the world.
Their biggest fundraiser and most ambitious project to date is the launch of a cookbook. This cookbook is scheduled to be sold in amazon.com later this year and the funds raised from the book will be directed to The World Food Program, a UN agency. But they need our help. There is a big deal of work involved in delivering this project. That’s why they have called everybody out there to help in different aspects of the project. The first task is to get the recipes that will go in the book. This is the part where anybody can participate.
If you have a recipe that you haven’t published on your blog (or anywhere else) you can send it to them to be included in the book. To learn more about this project and how you can help, please visit the official annoucement on the BloggerAid social network. I am sure we all can help one way or the other.
¡Buen provecho!

Wow Ben!! Buttery avocados make sense using them in muffins. You are so creative and can’t wait to get the cookbook and see all the lovely creations. “Donating a recipe costs nothing and may feed a few people”. This will be my motto from now on.
