Mango Chocolate Chip Cookies

Now here’s a cookie that needs some work. Don’t get me wrong, they were very tasty, but this is the first time I “invent” a cookie and I wasn’t very satisfied with the results. They were kind of soft and a little chewy. Maybe because I used a “fresh” mango that wasn’t very fresh (that’s what I get for buying mangoes in October!). I will have to try next time in the summer with good and juicy mangoes. Anyway here is what I did:

Mango Chocolate Chip Cookies
Recipe type: Dessert
  • •1 mango, diced
  • •2 cups all-purpose flour
  • •1 tsp baking powder
  • •1/2 cup sugar
  • •1/2 cup butter, melted
  • •3 eggs
  • •1/2 vanilla pod
  • •1/2 cup chocolate chips
  1. Pre-heat oven to 350°F
  2. Mix flour, sugar, baking powder, eggs and butter with an electric mixer. Cut vanilla pod lengthwise and scrape seeds into the mixture.
  3. Add mango and and keep mixing until all ingredients are well blended.
  4. Mix in chocolate chips with a wooden spoon.
  5. Grease 2 baking sheets and drop spoonfuls of cookie dough onto them.
  6. Bake for 12 minutes or until the edges are browned.
  7. Cool for several minutes before enjoying.

Any suggestions on how to improve these already tasty cookies will be greatly appreciate it :)

  • Mango chocolate chip? Sounds very choco-tropical, my friend. Maybe they were a little chewy because the mango adds too much moisture? I’d prob add a little coconut and play some Jimmy Buffet in the meantime :)

  • Hmmmm….I’m thinking about these. Not because I don’t think they wouldn’t be good, but I can’t imagine the taste. Mango always makes me think of fresh and tropical — light. Chocolate chip cookies make me think of warm, cozy, comforting — full! But you never disappoint with your creative ingenuity! I’m serious. I bow down to you for that oh great Ben.   • Hi! your cookies look great and I’m dying to try them but im a noob therefore I like to clarify something with you its about the butter is it 1/2 a cup before its melted or 1/2 a cup after its melter? One more thing how many cookies would this make? thanks
