Now here’s a cookie that needs some work. Don’t get me wrong, they were very tasty, but this is the first time I “invent” a cookie and I wasn’t very satisfied with the results. They were kind of soft and a little chewy. Maybe because I used a “fresh” mango that wasn’t very fresh (that’s what I get for buying mangoes in October!). I will have to try next time in the summer with good and juicy mangoes. Anyway here is what I did:
Mango Chocolate Chip Cookies

Recipe type: Dessert
Ingredients
- •1 mango, diced
- •2 cups all-purpose flour
- •1 tsp baking powder
- •1/2 cup sugar
- •1/2 cup butter, melted
- •3 eggs
- •1/2 vanilla pod
- •1/2 cup chocolate chips
Instructions
- Pre-heat oven to 350°F
- Mix flour, sugar, baking powder, eggs and butter with an electric mixer. Cut vanilla pod lengthwise and scrape seeds into the mixture.
- Add mango and and keep mixing until all ingredients are well blended.
- Mix in chocolate chips with a wooden spoon.
- Grease 2 baking sheets and drop spoonfuls of cookie dough onto them.
- Bake for 12 minutes or until the edges are browned.
- Cool for several minutes before enjoying.

Very cool Ben. I can’t wait to play with these. I just saw some mangoes that looked good at the market but I’ll have to wait until next Thursday to get them!

I loved the sound of these, mango & chocolate are a great combination, the juicy fruity against the rich chocolate. I spend a lot of time developing recipes and urge you to keep going to perfect this one – its a winning combination for me.

Ben, I like your adventure and the pairing here. The fresh mango could be the cause of your soft cookie. Here in the Asian markets, there are some vacuum-sealed, firmer mango slices which have less water, more concentrated and quite tasty.
Perhaps these will do the trick? In the meantime, enjoy the cookies!

Here’s a suggestion for you…how about grinding up dried mangos? You’d get the essence of mango with the wetness.
