Now here’s a cookie that needs some work. Don’t get me wrong, they were very tasty, but this is the first time I “invent” a cookie and I wasn’t very satisfied with the results. They were kind of soft and a little chewy. Maybe because I used a “fresh” mango that wasn’t very fresh (that’s what I get for buying mangoes in October!). I will have to try next time in the summer with good and juicy mangoes. Anyway here is what I did:
Mango Chocolate Chip Cookies
Ingredients:
- 1 mango, diced
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 cup sugar
- 1/2 cup butter, melted
- 3 eggs
- 1/2 vanilla pod
- 1/2 cup chocolate chips
Preparation:
- Pre-heat oven to 350°F
- Mix flour, sugar, baking powder, eggs and butter with an electric mixer. Cut vanilla pod lengthwise and scrape seeds into the mixture.
- Add mango and and keep mixing until all ingredients are well blended.
- Mix in chocolate chips with a wooden spoon.
- Grease 2 baking sheets and drop spoonfuls of cookie dough onto them.
- Bake for 12 minutes or until the edges are browned.
- Cool for several minutes before enjoying.
Any suggestions on how to improve these already tasty cookies will be greatly appreciate it

I loved the sound of these, mango & chocolate are a great combination, the juicy fruity against the rich chocolate. I spend a lot of time developing recipes and urge you to keep going to perfect this one – its a winning combination for me.

Ben, I like your adventure and the pairing here. The fresh mango could be the cause of your soft cookie. Here in the Asian markets, there are some vacuum-sealed, firmer mango slices which have less water, more concentrated and quite tasty.
Perhaps these will do the trick? In the meantime, enjoy the cookies!

Here’s a suggestion for you…how about grinding up dried mangos? You’d get the essence of mango with the wetness.

I’m loving joan nova’s idea of ground dried mangoes, used almost like a flour or a seasoning. Hmmm, inspires lots of ideas. Meanwhile, I may “sop up” the mango juices in this recipe with some oats. I’m a fan of oats in cookies all around, since it makes me feel like I’m doing something good for myself with all that cholesterol-reducing fiber… ; )
Meanwhile, I see you use a vanilla “pod” for this. Are you referring to half of a vanilla bean? If so/not, where do you find these economically? I’ve found single vanilla beans for around $1.50 at Trader Joe’s. I’ve immersed these immediately in sugar for vanilla sugar and then into vodka or bourbon for a lightly-sweetened taste treat or my own homemade vanilla essence (allow six months of “setting” time). Then I’ll scrape any leftovers from the pod’s center into holiday eggnog or spiced homemade ice cream.

Mango is a lovely fruit and I bet they had a lovely taste. The tip with the oats sounds like a good idea and oats are lovely in cookies.

Mango and chocolate is a nice combo and placing them in a cookie sounds great! When I saw the title I was thinking some kind of dried or semi dried mango.

Mango chocolate chip? Sounds very choco-tropical, my friend. Maybe they were a little chewy because the mango adds too much moisture? I’d prob add a little coconut and play some Jimmy Buffet in the meantime

Hmmmm….I’m thinking about these. Not because I don’t think they wouldn’t be good, but I can’t imagine the taste. Mango always makes me think of fresh and tropical — light. Chocolate chip cookies make me think of warm, cozy, comforting — full! But you never disappoint with your creative ingenuity! I’m serious. I bow down to you for that oh great Ben. Hi! your cookies look great and I’m dying to try them but im a noob therefore I like to clarify something with you its about the butter is it 1/2 a cup before its melted or 1/2 a cup after its melter? One more thing how many cookies would this make? thanks

I began making mango-chocolate chunk (or chip) cookies about ten years ago, and I ran into the same softness issue. I was aiming for a softer cookie, but not that soft! Some of the things that I found helpful were:
1) slightly more dry ingredients (coconut has been an excellent addition, I think someone else suggested it too!)
2) using a firmer mango and adding mango chunks versus moist shredded mango (dried mango is lovely for snacking, but not the same flavor, and it may be hard to find dried mango without added sugar or sulfites).
3) cook longer at a lower temp.
I was googling to see if anyone else had come up with a recipe, and lo! Hooray! Mango-chocolate chip cookies were my first foray into wild & odd cookie-baking; maybe I should share some other recipes here!

I am a pastry chef and I have been making a mango oat chocolate chip cookie for years. The key is the wet to dry ratio. The oats help to avoid the chewy texture and if you do not melt the butter at all, the batter will be firmer. I also chill mine while the over heats up (about 15 minutes) prior to baking. While I wont give out my recipe I will share this. Use DARK chocolate chips. The darker, the better. If you aren't a fan of 80% or more, them I recommend HERSHEY's Special Dark. Still sweet but a nice deep flavor. Really brings out the mango.

I made chocolate chip mango cookies by adding powdered mango pudding mix to my fav chocolate chip recipe. Porbably not a tasty as your but it's a good option for the winter months!
