I think I am back for good this time. These past few weeks have been very difficult for me, but it seems like things are coming back to normal. This “forced” retreat gave me the opportunity to think about many things regarding my life, my future and where I want to take this blog. My beloved readers may notice in the near future some settled changes in this blog. I would love to hear your honest opinions and suggestions because, after all, this space is for you all. Anyway, that is not happening just yet and we need to get back to food talk.

tastecreateI am very sorry that last month I missed one event that I look forward every month, Taste & Create. I was paired with Allison of Sushi Day, but after all that happened I just couldn’t get to create that delicious recipe I put my eye on. I promise I will make it soon and blog about it, even though it is now too late.

This month I was paired with Dolores of Chronicles in Culinary Curiosity and, though I am late, here is what I created from her delicious blog: Cucumber (and other crunchy vegetables) Vinaigrette. When I saw that the recipe called for jicama I knew I had to try it. What? You don’t know what jicama is? You better get to your closest Whole Foods store or Mexican Market and get one, they are perfect summer food. I will write soon about the benefits of this delicious root. In the meantime you can read this wiki entry to know more about it.

What do I think about this recipe? The refreshing combination of the jicama, cucumbers and red onions is perfect for a hot day (and we are starting to have really hot ones over here) However, I changed a couple of things from the original recipe. I used 1/2 red onion instead of 1/4 and brown sugar instead of regular sugar. This is something that I will make again this summer. Now, if you excuse me, last night’s leftovers are waiting to be eaten.

    I LOVE jicama. I used to eat this a lot in the Philippines with just rock salt. Oh it’s so good!

  8. Hola guapo! Here you are with an excellent summer salad! Never tried Jicama before but would love to… don’t know of any mexican food stores though… I should go to la Boqueria (the big market in Barcelona).

    Are you planning to do more changes to your blog? More? You know what you’d be called here? (this pretends to make you laugh, not to criticise you) You’d be called un culo inquieto!!!   11. I’m so glad to see you back. Just be kind to yourself and don’t try to do/be what everyone expects from you – just be and it’ll all fall back into place.

    I love the crunchiness of this salad – my favourite kind of salad has mucho crunch. I’ve never had jicama before – I need to get out of my shell.

  12. Yes! Welcome back…I look forward to what you have in store for us. Nowm Jicama is something I tried ages ago. In a taco (a trendy one!) and it was quite refreshing and delicious.

  13. Perfect combo, Ben. Very refreshing. I’ve been messing around with crunchy veggies, too — snap peas and radishes with pepper combos — I love all the bright colors. Jicama is perfect all by itself!
