This week marked the beginning of mango season for me. I promised you that I was going to post more mango recipes after that mango guacamole that was received very well. I sat down and wondered in what other ways I could use mango. There are mango smoothies, mango in fruit salad, mango juice, mango salsa, mango cake… and right there hit me. Why not mango pancakes? I have made banana pancakes before so mango pancakes wouldn’t be so difficult. And it wasn’t. All I did was add chunks of mango to my pancake batter and beat it with a hand mixer.
You could make them using your regular pancake flour, or you could make your own mix, which is more fun and you get puffier, lighter pancakes. How do you do accomplish that? Very easy. First you separate your eggs and beat the whites until stiff. In another bowl you add your flour (I use 1 1/2 cups of whole-wheat flour and 1/2 cup of regular flour) a pinch of salt, some vanilla extract, ground cinnamon, baking soda, the egg yolks, milk, some oil and baking powder (and your mango chunks, of course) You beat it all very well and then fold the egg whits until you get something like this:
Then you just make your pancakes as you usually do. You can check this video to see how it is done. Just follow those simple instructions and you will make the best pancakes you have ever had. Top them off with some fruit (fruit and pancakes are a great combo) your favorite real maple syrup, serve with mimosas and voila! you have a delicious weekend brunch.
