I&#039;ve had great luck with sticking with whole grains (no simple carbs) and a modified South Beach type of eating, with a day or two of cheating of course. I used a book written by the SB authors titled the &quot;good fats good carbs guide&quot;.    Back to the recipe, our salmon dish looks gorgeous and I&#039;ll be giving it a try with the chipoltles and brown rice!</description>

		<description>My favorite fish is salmon! I love the way it looks with all the vegetables and the addition of granola is definitely interesting. 

Another tip to add more flavor is to top the finished dish with grated orange/lemon/lime rind. It really gives it a burst of flavor and helps to bring everything together.</description>
