
The temperatures are finally starting to rise in this part of the world. Although it rained this morning, we had a sunny and lovely afternoon/evening. We finally reached the 60s! I love cold, gray and snowy days, but after a long winter I am ready for warmer weather. Spring makes me feel full of life and good energy. I want to go out, walk, swim and get rid of the extra pounds I accumulated during the winter. And I am going to start that by cooking more healthy food (although the great Daring Bakers challenges are not much help, see previous post) I’ve seen all over the blog-o-sphere delicious salmon recipes pop up (just take a look at Courtney’s delicious banana steamed salmon) so I picked up a delicious looking salmon fillet last time I was at the grocery store. Now the question was how to make it. After awhile I decided to make a honey-pasilla pepper sauce and bake the salmon and some vegetables in it. The result was the photo above. Honey pasilla baked salmon with vegetables Printable version Makes 2 servings Prep time: 10 minutes Cooking time: 25-30 minutes Method: Baking For this recipe you will need:
- 1 1-lb salmon fillet
- 2-3 pasilla chiles, deveind
- 2 TBSP honey
- 1/2 tsp cumin
- 1 lime
- 1 Roma tomato
- 1 garlic clove
- granola for crunchiness
- 1 red bell pepper, sliced
- 1/2 white onion, sliced
- 2 carrots, peeled and sliced
- salt and pepper

Preparation:
- Preheat oven to 350° F.
- Put the salmon in a baking dish and season.
- Submerge the pasilla chiles in boiling water for one minute until they soften.
- Blend pasilla chiles with the juice of one lime, cumin, tomato, garlic, honey, a pinch of salt and just a little bit of the boiling water (2-3 TBSP)
- Brush some of the sauce on the fillet. Top with some plain granola for crunchiness.
- Add vegetables to the baking dish and the rest of the sauce.
- Bake for 25-30 minutes.

About this recipe:
- I liked the flavor of the honey and pasilla sauce, but next time I make this dish I will let it marinate for at least a couple of hours before baking.
- I would also add some orange juice to the baking dish. The dish was very good. I’d just like a stronger citric flavor next time.
- I was originally going to use chipotle adobado peppers, but the store was out when I was shopping and I didn’t have to time to look for them in another store. I bet the smoky flavor of the chipotle would go great in the honey sauce.
- I served the salmon over steamed rice. I think it was a perfect combination, but next time I am trying quinoa.
Any more ideas for healthy food? That scale in my bathroom has become my worst enemy :p

Ben, the salmon looks wonderful. I agreee on a little citrus but may I suggest the zest of an orange? The juice might make it soggy.

I have no idea what a pasilla pepper is. Granola on salmon is something I never ever would have thought of although it does make some sense. This recipe is intriguing.

Have you conisdered using chopped pecans or almonds instead of granola? Also, be careful about marinating fish in anything citrus for a “couple of hours” the citrus with literally cook the fish. The chipolte peppers sound like a good idea to me. Yum

Moggy, you are right. A citric would cook the fish but I am not too worry about that. It could make a great ceviche! And adding nuts is a great idea!

My favorite fish is salmon! I love the way it looks with all the vegetables and the addition of granola is definitely interesting.
Another tip to add more flavor is to top the finished dish with grated orange/lemon/lime rind. It really gives it a burst of flavor and helps to bring everything together.

Hey Ben, great site here! I just gave you a little stumble love! I’ve had great luck with sticking with whole grains (no simple carbs) and a modified South Beach type of eating, with a day or two of cheating of course. I used a book written by the SB authors titled the “good fats good carbs guide”. Back to the recipe, our salmon dish looks gorgeous and I’ll be giving it a try with the chipoltles and brown rice!
