[...] To make this breakfast you will need to fry Mexican chorizo. The secret is to fry it for a long time to bring all the flavorful spices and chiles out. Once the chorizo is becoming brownish drain and set apart. In a separate bowl whisk together eggs, salt, pepper oregano and just a little bit of buttermilk or evaporated milk. Cook eggs and chorizo together and serve with avocado, refried beans, a slice of queso fresco and fresh handmade corn tortillas. [...]

Ben I need your help! My mom is wanting me to make fresh tortillas like her mom use to make. So far has been EPIC FAIL. She remembers them being kind of sweet? You wouldn't happen to have a sweet tortilla recipe up your sleeve would you? I'm using the same masa grams used, not sure about a sweet tortilla tho- have you come across anything like that?

Oh WORD! We eat more tortillas at breakfast than we do any other time of the day. Tis true. I remember scrambled eggs with chorizo steaming up the kitchen and then getting those fresh tortillas to wrap them up- YUM! I have yet to find a good veggie version chorizo. I've been ruined by the real thing I think.
And would you believe I have never thought to fry the tortillas for breakfast, we always just eat them soft. How crazy is that??!! Thanks for the great idea.

Hola Suavecito! Yipes, I'm a little late to the party, eh? Those sopas look great! I had a leftover pupusa and platanos con crema for breakfast yesterday, but I think I would've gotten a lot more done if I'd had your sopas. :) I love aguacates. The only Spanish I can speak is food words.
