Snacks – Game Night Mini Pizzas

gamenight.jpgThe big game (Super Bowl) is this coming Sunday and there will be a lot of snacks and beer flowing in front of the TV. This is the time for us, food lovers, to get creative and make simple and delicious food. Somebody who got very creative with this event was Mansi Desai from Fun and Food. Game Night Party Recipes is a collection of easy recipes perfect for a game night, no matter what sport of board game you are planning to watch/play.

I am participating in this event with one recipe that Bob Jackson suggested on this flour tortilla crepé post. It’s simple, fast and uses only a few ingredients. However, for the pictures on this post I made my pizza sauce and my flour tortillas from scratch. You don’t have to do that, of course, but if you buy your tortillas at the grocery store make sure to follow Bob’s suggestion:

I use flour tortillas to make a thin crust pizza. I use 2 tortillas, I put mozzerella cheese between the two and then on the 2nd one I put pizza sauce and my toppings. Then I bake it in the oven at 400 degrees until the cheese is melted. It makes for a simple pizza and one that is not too big for one person to eat.

I only used one tortilla for the pizza because I made them thicker. Also, the pizzas were vegetable, because Mansi is vegetarian, though we were allowed to use cheese, which was very good for me.

This is what I suggest you use:

Flour tortillas. The small size, not the humongous ones.
Spaghetti sauce.
Shredded mozzarella cheese.
Sauté vegetables (I used mushrooms, onions and broccoli).

Just follow Bob’s preparation and you will be good to go. And if you have any remaining tortillas you can use them to make some crepes for dessert! I am looking forward to seeing what other participants’ came up with.

What are you going to eat the big night?
