To continue with the pumpkin recipes I have been trying these last weeks, here’s one that immediately became one of my favorites. In the past I have made banana, chocolate chip, cinnamon and other kinds of pancakes. But the result of introducing pumpkins and pancakes has been the best so far.
This is a very simple recipe if you use commercial pancake flour:
Just follow the instructions on the package to make 8 pancakes and add the following ingredients to the mixture:
- •1/3 cup canned pumpkin puree
- •1/2 tbsp cinnamon
- •1 tbsp vanilla extract
- •1 tbsp unsweetened powder cocoa
- •1/2 tbsp ground ginger
- •1/4 cup vegetable oil
- Mix all ingredients with a whisk until you obtain a light orange, smooth batter.
- Cook pancakes as you usually do.
After attending the pumpkin show this week I have come out with new ideas that I will be trying. Expect more pumpkin surprises in the future.
